LEMON-MATCHA COOKIES

Are you having trouble staying in the Halloscream holiday spirit all the while still eating clean and not letting your conscious get the best of you? Are all of the processed candies haunting you OR is it all of the sugar-filled treats surrounding you everywhere you turn that keep calling your name? 

LOL.

THE STRUGGLE IS REAL. . . . . . . . .SIKE!

There are no struggles allowed because WE GOT THIS. Don't fret my beautiful body beauty loving babes, I've got a yummy little recipe to share that'll keep you in-check and cure your sweet tooth in no time. Eating clean isn't about counting calories or the amount of sugar a product has on the nutritional labeleating clean is about eating REAL INGREDIENTS that nourish, fuel, and energize your mind, body, and soul. Eating clean is about knowing #exactly what you're putting into your body AND knowing that it's unprocessed, all-natural, and non-GMO. All you have to do is be conscious of the ingredients that you're consuming or using while cooking + baking for that matter. I make it my sole mission to create recipes utilizing REAL ingredients only.

If you're new this eating clean way of life, the holiday season may seem a little intimidating to keep your eating habits on trackbut TRUSTit's not nearly as bad as it seems. Earlier this week I talked about all things MATCHA GREEN TEA. I'm obsessed. Matcha green tea is just SO incredibly amazing and beneficial to the body in countless ways that you really need to implement it into your life like, today, right now. ASAPAs mentioned in my [blog post] matcha green tea can be utilized in baked goods which means COOKIES are in order.

I MEAN, DUH. COOKIES! I WISH YOU ALL COULD SMELL MY HOUSE RIGHT NOW, THE GREEN TEA AROMAS ARE HEAVEN—I'm drooling, I COULD BASICALLY LICK THE AIR + YOU CAN THANK MY HANDSOME LITTLE NEPHEW FOR THESE GREEN FRANKENSTEIN INSPIRED COOKIES! LET'S GET IT.

I N G R E D I E N T S

dry

  • 3 cups gluten-free oat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon pink himalaya sea salt
  • 1 1/2 cup natural cane sugar
  • 1/2 cup sucanat sugar
  • 3-4 tablespoons lemon zest, finely grated

wet

  • 1/2 cup vegan butter—or 1 stick Vital Farms butter, softened
  • 2 Vital Farms eggs
  • 1 teaspoon vanilla
  • 1 tablespoon lemon juice, fresh
  • 3-4 teaspoons matcha green tea powder

I N S T R U C T I O N S

  1. Preheat oven to 350 degrees F.
  2. Sift flour, baking soda, baking powder, and salt into a bowl. Set aside.
  3. In the meantime, place the paddle attachment onto the electric stand mixer. Add both sugars and lemon zest into the bowl and mix on medium speed for about 30 seconds.
  4. Add butter, mix until pale and fluffy—about 1 minute—mix in eggs, 1 at a time. Add vanilla, lemon juice, and matcha powder.
  5. Reduce speed to low, gradually add in sifted flour mixture and continue to mix until just fully combined.
  6. Using a 2-inch ice cream scoop, scoop dough on parchment-lined baking sheet placing each scoop two inches apart.
  7. Place cookies into the oven for 10-12 minutes, or until the edges become slightly golden. Let cool on wire rack for 5 minutes, transfer cookies to wire rack using a spatula—allow to cool completely. 
  8. Cookies can be stored in an airtight container at room temperature for up to three days!
  9. Enjoy!
