SIMPLE MILLS BANANA BREAD

TREAT YO' SELF 😎 ðŸ™Œ is my exact #current mood is as I sit here in Knoxville munching on three different freshly baked mini-loaves of Simple Mills banana bread that has my whole room smelling like a luscious heaven of banana—LOL, it doesn't get much better than this! Life is good babes, life is GOOD. 

As you all may know, earlier this week I shared my healthy obsession with Simple Mills + their killer boxed mixes [read more here] because they are the REAL deal. From ingredients to taste to the team that curates the amazing boxed mixes, Simple Mills is real life #goalsinabox! And their FROSTING 🙀 don't even get me started. CRYING tears of joy how delicious, clean, and easy it is. 

PAUSE, before I go any further, may I just highlight one of my favorite features of the "box" that just brings me pure joy—pretty please? YAY. Okay, so listen—I'm so indecisive with just about 89.9% of everything I do in life [ask Blu] but Simple Mills gets me because on the back of their boxes where the ingredients + directions are displayed, their #amazing team gives you their guide on how to turn their banana muffin mix into bread OR muffins, turn their chocolate muffins into a cake into cake, muffins OR brownies as well as their pancake mix into waffles or pancakes KNOWING the difference between textures! Obsessed. CHEERS to a company that understands my indecisvieness + lays it all out for me in a simplistic way.

Here's one of my new favorite mixes enhanced with just a few ingredients to give it an extra boost of nutrition:

I N G R E D I E N T S 

  • 1 boxed mix of Simple Mills banana muffin + bread mix, we use the "LOAF" ingredient list
  • 2 tablespoons chia seeds
  • 1 really ripe banana
  • 1/4 cup raw + organic walnuts
  • 1/4 cup cacao nibs

T O P P I N G S: bare cinnamon banana chips, cacoa nibs, Simple Mills vanilla icing, and organic raw honey drizzles!

D I R E C T I O N S

  1. Follow the directions on the back of the box as directed.
    • Heat the oven—mix the egg, water, and oil.
  2. Once mixed as the box suggests, add in my remaining ingredients + listen closely below!
  3. Using a mini-loaf pan to create three personal sized banana bread loaves—grease these bass boys with Chosen Foods avocado oil spray.
  4. Add batter and top on loaf off with bare cinnamon chips, another with the cacao nibs [this extra crunch is EVERYTHING] + leave the last loaf plain for frosting.
  5. Bake for 10-12 minutes—or until toothpick comes on clean and the edges of each loaf begins to pull away from the pan.
  6. Allow to cool, about 8-10 minutes.
  7. Remove from pan, drizzle with honey + add icing!
  8. Enjoy!
    • *MAJOR side note: the Simple Mill boxed mixes do NOT contain any preservatives [how dope] so once you bake + finish stuffing your face, place the baked goodies into the fridge or freezer!
