MINI-QUINOA APPLE PIE A LA MODE

After a killer #workoutwednesday and getting my booty kicked by our personal trainer Lauren, I was craving something more after dinner 😋 so I decided to make a quick, high protein + low sugar dessert! #bestideaever This past weekend I ventured off to a local Farmer's Market + scored myself so many yummy body-loving goodies and I left the market with a car load of heaven ☁️💆☁️ I may or may not have went overboard on my apple supply this past weekend, but HEY, if this quinoa apple pie a la mode is the consequence of my actions I'm all for it and then some!

As I paced back + forth in our kitchen, I couldn't help but snag an apple and start chomping down until it hit it 🙀 APPLE PIE. Yes. Sold, have to—as I thought to myself, when was the last time I even had apple pie? My answer: far too long ago. My solution: get cooking!

Knowing an extra kick of protein wouldn't hurt, I decided to crelate a high protein + low sugar content take on apple pie and GET THIS 🤔 even the ice-cream fit perfectly into my plan because Halo Top is obviously the friggen bomb.com and creates one of the most silky, decadent + nutritiously based ice-creams you will ever taste.

PAUSE, literally. Is this real life? Yes, why yes it is beautiful people.

I'll be getting more into my obsession with Halo Top this upcoming week, but until then I'll just sit back + enjoy this little dessert—there's no other way be! Here's how I did it 😏🤘

I N G R E D I E N T S—makes one serving

  • ½ cup of organic quinoa
  • 1 cups of filtered water
  • 1 apple, thin slice
  • 2 tablespoons Wholesome! organic coconut palm sugar
  • ½ cup of Siggi's Dairy plain filmjölk, drinkable yogurt
  • ½ teaspoon cinnamon
  • ¼ nutmeg, freshly grated
  • 1 scoop of Halo Top vanilla bean ice-cream

D I R E C T I O N S

  1. Combine quinoa + water into a small pot, over medium heat, and bring to boil.
  2. Once all the water is evaporated—reduce heat to low, cover, and simmer until quinoa is tender and all liquid is absorbed.
  3. In a small sauté pan, on medium heat, add apple slices. Allow the apples to cook down and become tender—once tender, sprinkle 1 tablespoon of coconut palm sugar right on top of the apples and allow to slightly caramelize + turn the heat down to low.
  4. Add the remaining ingredients [1 tablespoon coconut palm sugar, plain filmjölk, cinnamon + nutmeg] to the quinoa while it is still on low heat + mix thoroughly.
  5. Remove quinoa from heat and place it in a small glass cup [or cup-ware of your choice] place the apples right on top + then add a big ol' scoop of ice-cream!
  6. EAT UP, enjoy!
