GINGERBREAD SPICED WAFFLES

REPEAT. AFTER. ME.

As long as I'm eating #real food, I can eat whatever I shall please. LITERALLY. After my brother and I whipped up a batch of these waffles, I knew exactly what I'd be eating EVERY. SINGLE. DAY. for the rest of the week. #YASGINA

Waffles are always a #goodidea. The aroma these bad boys give off should be enough to get you hooked and if that doesn't do it JUST. WAIT. UNTIL. you fork a double stack drizzled with a little bit of syrupI immediately went silent. That's rare. It was awesome and I tip my hat off to my little brother for collaborating with me on this recipe! I 1,000,000,010% love having my cooking partner back! I N G R E D I E N T Sserves about 5-6

waffles

  • 1 1/4 cup unsweetened almond milk + 1 teaspoon apple cider vinegar
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 honeycrisp apple, shredded
  • 2 cups gluten free flour
  • 1/2 cup rolled oats
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon pink himalayan salt

spices

  • 1 tablespoon ground ginger
  • 1 1/2 teaspoons ground cinnamon
  • 1/8 teaspoon ground clove
  • 1/4 teaspoon nutmeg, fresh, grated

optional add-ins for a little more of a nutritional kick

  • 1 tablespoon flax seed
  • 1 tablespoon chia seed
  • 1 teaspoon maca powder

I N S T R U C T I O N S

  1. Preheat waffle maker.
  2. Combine almond milk and apple cider vinegar together in a large bowl and let set for 5 minutes until coagulatedthis will make your vegan buttermilk.
  3. Once coagulated, in the same bowl, whisk in oil, maple syrup, and apple until well combined. Set aside.
  4. In the meantime, sift together all of the dry ingredients and spices.
  5. Fold dry ingredients into wet ingredients until fully corporate—*try not to over mix, some chunks are okay.
  6. Once waffle maker is ready, generously coat the insides with Chosen Foods coconut oil spray and pour about 1/2 cup batter onto the waffle maker.
  7. Let waffle cook. I like mines a with those CRISPY AF edges so I let mine cook for an extra 30 seconds or so!
