LEFTOVA' TURKEY SOUP

This has got to be one of my most favorite times of the year. YES. I just LOVE being at the mall to hear the endless holiday playlist blaring through the speakers as I find myself driving through downtown once the sun goes down solely to gawk at the holiday lights plastered everywhere! It's the 'friggen best. Ever. Whoever ever said that this was the most wonderful time of the year was absolutely 110% spot on. The smiles, hugs, laughs, and sweet memories will live on 4ever. And the #leftovers—don't even get me started. Drool. The holidays have the BEST 'leftover' game i've ever tasted.

THERE'S. SO. MUCH. FOOD. SO. MUCH. LOVE. NOT. ENOUGH. TIME.

I wish I could secretly live in this season for eternity.

PSA: when your boyfriend's mother says, "I left the turkey legs in the fridge for you to....."—you know IT'S. ABOUT. TO. GO. DOWN. Oh heck yes! Soup was on my mind major time, especially since I've been feeling under the weather these past few days.

SHIMMY SHAKE THOSE SHOULDERS 3 TIMES IF YOU'RE DOWN FOR SOME dang good LEFTOVA' TURKEY SOUP—IT'S. TOO. EASY.

I N G R E D I E N T S

  • 1 red onion, peeled, chopped
  • 3 medium carrots, peeled, chopped
  • 3 medium celery stalks, cleaned, chopped
  • 2 tablespoons dried parsley, oregano, thyme, rosemary—I live for herbs, but you don't have to. Add more, add less.
  • 4 tablespoons dried granulated garlic
  • 2 bay leaves, *optional
  • 1 32-ounce box chicken broth
  • 2-3 quarts water
  • 1 leftover turkey carcass, legs, thighs, wings
  • pink himalayan sea salt + pepper, to taste
  • 4 green onion stalks, cleaned, chopped to garnish—*optional

I N S T R U C T I O N S

  1. In a large stock pot, on medium heat, sauté onion, carrots, and celery.
  2. Once onions become translucent, add in spices and herbs. Let cook for one minute.
  3. Add chicken broth and water—pour in additional water if needed to cover. Turn up the heat.
  4. In the meantime, add in the turkey carcass and bring mixture to boil for one minute.
  5. Reduce heat to a simmer.
  6. Remove carcass and any bones!
  7. Sprinkle in salt, pepper, and optional garnishes. EAT. UP.
