LEMON-BERRY CHIA COMPOTE

CONFESSIONS OF A LEMON ADDICT: there isn't a day that goes by where I haven't had a lemon 'something'. Seriously. 

HAPPY 1ST OF SEPTEMBER MY LOVIES! There's only 21 days left of summer until #fall is in full-throttle from fashion to recipes to the weather changing, woo!

Earlier this week I highlighted the wondrous body beauty attributes that lemons obtain [read more here] and of course, today's recipe is going to be lemon packed with a little hint of my blueberry stash from my farmer's market trip last weekend. #getready

I was #berry HAPPY to be heading into this holiday weekend with one of my favorite girls in the world coming down to visit me for a #girlsweekend, OH HECK YES! I've been planning out our three days together since she booked her flight months back + canNOT wait until she's here. I'm overflowing with excitement because I don't get to see her often, but when I do—it's like we're back in Rhode Island just hangin' as we casually walk around the mall shopping + girl-talking our way to Auntie Annie's pretzel stand 🙊 to get one order of cinnamon and another order or original and then split them! LOL, real life. #thosewereTHEdays

As I'm trying to plan everything ahead of time for this weekend, we both made a pact to stay-in and cook, cook, cook! Whenever we're together, we're usually always on the hunt for a super dope nutritious conscious spot to eat, but this time around—I'm stocking up the fridge and we'll be cooking and enjoying the views from home, with one or two exceptions. 

Getting in my last few #summer inspired recipes, the best part about making a compote is that it takes a mere 15 minutes and once it's done, you can put in on just about E V E R Y T H I N G—topped off on waffle or pancake towers this weekend, stuffed inside of muffins or french toast, drizzled over oats, dripping down the sides of out massive ice cream sundaes, and the list can go on! I really wanted to utilized these blackberries and blueberries + lemon to create a compote that warm and fruity with a subtly tart + sweet flavor. You're going to love THIS compote, it's packed with antioxidants and made with just 4 ingredients.

I N G R E D I E N T S

  • 1 cup blueberries, fresh or frozen
  • 1 cup blackberries, fresh or frozen
  • 3-4 tablespoons lemon juice, fresh
  • 1 teaspoon lemon zest
  • 2 tablespoons chia seeds [add after compote is removed from heat]

*OPTIONAL: 1/4 teaspoon fresh ginger + 1/4 teaspoon cinnamon + 1 teaspoon raw sugar—this will elevate the simple taste + create different layers of flavor.

D I R E C T I O N S

  1. Place all fruit, juice, and zest in a small sauce pan over medium heat.
  2. Bring mixture to a boil.
  3. Once bubbling, reduce heat and use a wooden spoon to gently muddle + mash the fruit.
  4. Allow mixture to continue to cook over medium-low heat for 10-12 minutes, frequently mashing fruit to combine all flavor.
  5. Remove from heat, transfer mixture to a glass jar [or preferred container] and allow to cool thoroughly.
  6. Add chia seeds.
  7. Store in the fridge + reheat when ready to serve onto of any given creation!
