BRING ON THE GREENS SALAD
I. AM. OBSESSED. WITH. SALADS.
Salads are quick. Salads are versatile. Salads are THE. BOMB. If you know me, you know that 90% of the time I'm either eating a salad, thinking about a salad or ordering a salad. I despise the fact that 'salads' sometimes get such a bad reputation around town or shuned because 'salads are too healthy' or 'EW, salads are nothing, but leaves and bird food'—LOL, that's so not true. There's no such thing people!
Salads are and can be a various mixture of greens, raw or cooked vegetables, grains, nuts, dried fruits, fish, poultry, and herbs—the ingredients are ENDLESS. There's no limitation as to what you can or cannot put into your salad, but HOTT. DIGGITY. let's get that stereotypical idea of what a salad is out of our minds and keep an open mind here.

Let's start simple today. I love me some greens—I snagged this super quick salad from my boyfriend's family and then put my own little twist on it with some fresh lemon juice and avocado! I'll be bringing you a series of salads that I've created over the next few weeks that are simple for everyday eats and even up to par for a side dish to bring to your next big happy holiday party. #greens4president
I N G R E D I E N T
- 2 cups organic kale
- 1 cup organic power greens
- 1/2 red onion, thin slice
- 1 cup feta cheese
- 1/4 cup sunflower seeds
- 1/2 cup dried cherries
- 2 organic lemons, juiced
- 1 organic avocado
I N S T R U C T I O N S
- In a large mixing bowl, prepare all ingredients as directed above.
- Toss to combine. Drizzle on fresh lemon juice and top with avocado.
- Ya' done! Yes, it was that quick. ENJOY.
